Wahoo Fish Tacos

Wahoo Fish Tacos
 
1 lb. Wild Caught Wahoo
1 C. Organic Purple Cabbage, Shredded
1 C. Greek Yogurt
Juice From One Organic Lemon or Lime
Organic Seasonings
2 T. Organic Butter
Organic Salsa
Corn Tortillas
Organic Olive Oil

These are quite easy to make and surprisingly made a big hit with my family.
Bake Wahoo in a covered dish with the butter and whatever seasonings you like to put on fish. I use oregano, basil, thyme and garlic in just about everything I cook. This will take approximately 15 minutes to bake. Just check to see if it’s done. There’s nothing worse that dry fish, unless it’s dry chicken. Yuck! Anyway, while that’s cooking, chop your cabbage and set aside. Put the yogurt in a dish and add the lemon or lime juice and mix in and set aside. Cook the tortillas in olive oil in a hot skillet (cast iron is my preference) until as crispy as you like. Lay on paper towels to soak up excess oil. When fish is done baking, assemble tortillas with all toppings and eat up, yum!!! So easy, so delicious, and so good for you! If you have never tried Wahoo, it’s quite a meaty fish. Maybe like Mahi Mahi or Swordfish. Really any fish will do.
