Saltine Toffee

Saltine Toffee
My girlfriend told me that the best baking recipes begin with 2 sticks of
butter…..and away we go!

Preheat Oven to 350°

2 Sticks Organic Butter
1 C. Organic Brown Sugar
1 Box Organic Saltine Crackers
1 Bag Soy Free Chocolate Chips (Enjoy Life® is the only brand I’ve found except for chocolate I’ve made myself, that does not contain soy.)

Line a 9x13 pan with aluminum foil. Take one of the sticks of butter and coat the layer of foil. This doesn’t have to be thick. You probably won’t notice much of the butter gone at all. Okay, put this stick of butter and the other one in a sauce pan with the sugar over high heat. While this is melting, line the baking pan with the saltine crackers. Now, these can be broken because in the end they will be anyway. Now back to the sauce pan. Stir the butter and sugar as it boils for three minutes then pour the mixture over the crackers in the baking pan.

Place in the oven and bake for 10 minutes. Remove from oven and pour chocolate chips on it. Let them melt then spread over the cracker mixture so it’s all covered. It’s easiest to spread this with the back of a spoon. How many chocolate chips you put in depends on how thick you want this chocolate layer to be. I use probably just less than half the bag. Place this in the freezer until it’s hard, about an hour.

Remove from freezer and pull off of foil in chunks. Break apart so it’s in nice bite size pieces. Be sure to get all the foil off the back. You wouldn’t want to bite into that with those silver fillings, ouch! Place in container and store or eat or give away. This is an easy treat to pass out at Christmas to your neighbors. It is very sweet.
